<p>People have been talking about Coreanos for months now, and I have heard from several different sources that they have the best Mexican in Seoul! With a claim like that I was more than eager to try it. But once again my laziness got in the way of me leaving my hood to actually go and eat there. But if Mohammed wont go to the mountain, the mountain will come to Mohammed and they very fortunately opened up a second store in Itaewon. Hurrah, all roads lead to Itaewon!</p>

<p>I visited during their soft opening launch last week. We got there early, in just enough time to snag ourselves a window seat. Luckily the queuers hadn&#8217;t taken up their spots yet, but I&#8217;m sure it shan&#8217;t be long. The restaurant is large and set over two floors. Located on the hill just next to Berlin. After a good old gander of the menu we ordered up a whole host of tacos, a burrito, and a couple of cocktails.</p>

<p>While we were waiting for our drinks we were presented with our complimentary chips and salsa. As you can see from the picture there are four kinds and it&#8217;s served in those adorable dishes. The spoons are probably a bit redundant, but it looks nice. The salsas varied in flavour and were rather scrumptious.</p>

<p>After quickly devouring the chips, I glanced over to see our drinks being made. The bartender was using Rose&#8217;s lime cordial, a perfectly fine mixer if its going in a vodka soda lime, but not in a margarita (9,000) or a mojito (9,000). When my drink was presented my heart just fell. I tasted a sip and it fell even further. The manager asked me what I thought and I asked if they had any crushed ice.  He said he would blend it for me and throw in some extra rum. It was better, but it still awful. There is just no excuse for such a poorly made drink. I wish I had just sent it back, but it was busy and I didn&#8217;t want to cause a fuss (which strangely is very unlike me). I know the price of limes in Korea is ridiculous, and that most mojitos in Seoul using them cost around 15,000. Which I think is fine as long as they are exceptionally good. But there just isn&#8217;t any come back from using generic rum,  uncrushed ice, and synthetic lime syrup and calling it a mojito because there are a few mint leaves floating it it. You can get lime concentrate juice, frozen limes, or special mojito mixes and still make a decent drink and turn a good profit. So owners of Coreanos you owe me a drink, and I beg of you change the recipe or take it off the menu because its just not acceptable right now.</p>

<p>The Margarita (9,000) tasted better than the mojito but really isn&#8217;t anywhere where it should be at that price. <a title="On the Border – Itaewon" href="/2013/12/14/on-the-border-itaewon/">On the Border&#8217;s</a> margaritas are cheaper and about 10,000 times better. So take note and work on the recipes. If need be I&#8217;m willing to offer my skills as a taste tester to help you improve!</p>

<p>Thankfully the first round of tacos and showed up and really bucked up our spirits. We had ordered one of every flavour, as to not miss out on anything delicious. Above are the Galbi Beef (3,300) and the Braised Pork belly (3,600). I really enjoyed the braised pork belly, the meat was tender and and well flavoured, though combined with the taco it was a touch dry. A blob of sour cream or some dressing on top and it would be perfect. The Galbi one was nice enough too, though I can&#8217;t really say it was all that memorable.</p>

<p>The Battered Fish taco (3,600) was the star of the day taco wise. You can&#8217;t beat a good bit of battered fish. The tartar sauce on top was delightfully fresh, and the red pickled onions balanced out the dish well. I would certainly get another one of these next time.</p>

<p>We also ordered the Todos Burrito (12,000), which was tremendous! Stuffed with extra meat, beans, salad, sour cream, and guacamole. It was incredibly well balanced and tasty. It&#8217;s undisputedly the best burrito I have ever had in Korea, possible one of the best ever. Either way it was amazeballs.</p>
<p>We waited quite a while for the second set of tacos as they had lost our order, it being their soft opening and all I could live with that, if I hadn&#8217;t had to listen to the angry man at the next table screaming at the poor waitress as their order got mixed up too. Having been a waitress for a number of years in my youth I am fully aware that these things happen, especially during training. but it did dampen the evening a little. I have noticed a real trend towards soft opening these days, and I think its a great idea while everything gets perfected. However I do think if service and food aren&#8217;t quite up to standard yet restaurants should lower their prices by 10 or 20% to compensate for this. Our whole meal took over an hour and a half, which was frankly just too long for 5 tacos, a burrito, and a drink each.</p>

<p>Eventually the second set of tacos arrived. We got the Citrus chicken (3,300) and the Grilled shrimp (4,000). The shrimp was nice enough but couldn&#8217;t compare to the <a title="Vatos Urban Tacos" href="/2014/04/17/vatos-urban-tacos/">Vatos</a> shrimp taco which I would sell my own babies to eat. The chicken was the better of the two, a good mix between the zingy dressing and the flavour of spice braised chicken. I think after trying them at several different restaurants I&#8217;m just not sure if I&#8217;m sold on the whole corn tortillas thing. Call me crazy but I just prefer the wheat ones. I&#8217;m sure Mexican enthusiasts everywhere are calling me a culinary cretin but I just find them too thick and claggy. The wheat ones are what I know and love. I also enjoy the wafer thin ones you get at Vatos, but it&#8217;s horses for courses and just a matter of taste on my part.</p>

<p>All in all I would give Coreanos another shot if only to get another burrito, in fact I would probably get two as they really are that good. But unless they get their cocktails up to par I would probably get it to go. Life&#8217;s too short for bad cocktails and for me they are integral part of the Mexican food experience.</p>

<p>Coreanos Vista is located at 457-3  Itaewon-Dong, Yongsan-Gu , Seoul. To get there  take a train to Noksapyeong station (line 6). Use the elevator to exit the building so you come out by the bridge. Walk over the bridge and turn right and follow the alley way around. Coreanos will be on your right just before <a title="Berlin" href="/2012/10/08/berlin/">Berlin</a> and Buddha’s Belly.</p>

<p>I do love my kalbi, out of all Korean foods it&#8217;s still my favourite. The problem is I just don&#8217;t eat it enough. I use it in the winter to make stews, but in the summer other than eating it Korean style I&#8217;m always at a bit of a loss. So making kalbi tacos which are all the rage stateside seemed ideal. This is one of the best dinners we have had in a long time and a perfect no hassle meal if you are having friends over.</p>

<p><strong>Ingredients</strong></p>
<p>1 roll of kalbi per person</p>
<p>2 small tortillas per person</p>
<p>1/2 an avocado sliced</p>
<p>Lettuce leaves for serving</p>
<p><em><strong>Salad</strong></em></p>
<p>A small wedge of red cabbage</p>
<p>1/2 a cucumber</p>
<p>1 green pepper</p>
<p>1 stick of celery</p>
<p>5 green onions</p>
<p>1 large handful of cilantro (고수)</p>
<p>&nbsp;</p>
<p><em><strong>Dressing </strong></em></p>
<p>3 tablespoons of sesame seed oil</p>
<p>2 tablespoons of soy sauce</p>
<p>1 tablespoon of grated fresh ginger</p>
<p>1 tablespoon of lemon juice</p>
<p>1 tablespoon of sesame seeds</p>
<p>1 tablespoon of hot sauce or gochu paste</p>
<p>&nbsp;</p>
<p><strong>Directions</strong></p>
<p>1. To make the salad, grate the cucumber then slice the pepper, red cabbage and celery very finely and put in a bowl. Use a pair of scissors to cut the green onions and cilantro and add to the bowl and mix everything together.</p>
<p>2. To make the dressing, put all the ingredients in a bowl and mix together, then pour over the salad.</p>
<p>3. Put a frying pan on medium heat, then add a piece of the kalbi. Cook on one side for about 3 minutes, then flip over and do the other side for another 2-3 minutes until it&#8217;s browned on both sides. Be sure to cut the rib pieces off and cook them separately as they will take much longer. When the meat is done, leave to cool while you cook your next piece. When it is cold enough to touch, cut it into strips. it&#8217;s much easier if you use a pair of scissors.</p>
<p>4. When everything is done, put it all out and let everyone assemble their own. A bottle of sriracha doesn&#8217;t go amiss either, it gives a nice kick for those who like it spicy.</p>

<p>It&#8217;s party time again down at On the Border. Once again they are hosting their monthly margarita party night. I went last month and had an absolute blast. This month they are having the party at two locations, at Sinchon tonight and at Itaewon next Thursday. The Margarita party costs 35,000 per person for all the food and drink you can manage. This deal is amazing, considering we all know that On the Border isn&#8217;t the cheapest Mexican in town.</p>

<p>In the drinks package you get four different kinds of margarita. You get one beergarita with an 8 ball or tangerine IPA. Then you get one regular margarita rocks or frozen. Then you get one blue and one red. I love On the Border margaritas, they really are so tasty and kick ass. If you manage to chug your way through all those margs and you&#8217;re still thirsty, draft beer is unlimited. So get your party on bitch.</p>

<p>As well as all those lovely drinks there is also a whole host of food going on. Knowing the price of the margaritas I really didn&#8217;t expect that much last time, other than chips, salsa, and some canapes. But when we got there, there was a giant table filled with food. They pretty much had the whole menu there. 3 kinds of tacos, beef, chicken, soft, and hard. 2 kinds of enchiladas, quesadillas, grand nachos, rice, beans, salad and all the dips and guacamole you could want. I of course indulged in about three plates as is my want. It was very impressive. Again the food was worth it alone. It&#8217;s a very good deal if you like to eat and drink as much as I do.</p>

<p>Ok Fat Girl fans, I am about to rock your world right now so hold on to your hats. A mere two weeks ago the greatest company ever was launched in Korea. The name of that company is <a href="http://www.ynot-takeout.com/">Y-Not takeout</a>. These amazingly smart people have done what no one ever thought possible, delivery western food in Korea. The service is just starting out in Seoul but they plan to make it nationwide overtime. They are currently operating in the following central Seoul areas; Itaewon, Haebangchon, Kyungnidan, Hanam-dong, Yongsan Army Base and Banpo-dong.</p>

<p>A few months ago I was thrilled at the prospect of getting Indian food delivered to me through<a title="Chakraa" href="/2014/02/11/chakraa/"> Chakra</a>. But now I can get Mexican, Russian, Thai, American, African and even KFC! A bucket of the Colonel&#8217;s chicken delivered right to my bed. I&#8217;m salivating at the thought. No longer will I have to pester the Fat Boyfriend into going to Itaewon for food on hangover Sunday. I can get it delivered right to the door and the best thing is it&#8217;s all in English. No more Konglish and call backs to Pizza hut for me.</p>
<p>We tested the service out a few nights ago and decided to opt for some Mexican from Taco Amigo. This was actually the very first restaurant that I ate at in Itaewon nearly 6 years ago. So it&#8217;s about time that I got round to eating there again. I had forgotten how good it is. The Mexican cuisine here is actually very authentic while still offering the dishes you know and love. Even the corn tortillas taste homemade.</p>

<p>We placed our delivery order and  less than 45 minutes later it arrived with the kind and friendly delivery driver. You can pay with cash or card which makes it even simpler. As you can see above we ordered a chimichanga (13,000), Enchiladas Suizas (14,000), and Steak Taco set (10,000)which came with chips, rice, and beans. All this for only 41,000 and I didn&#8217;t even have to leave the sofa. I&#8217;m living the dream.</p>

The site will tell you which ones are open and which are closed.  You can also order from more than one restaurant at a time. So if your fights revolve around Thai verses pizza as ours often do, peace will be resumed as you can have both, you just have to pay two delivery fees. You can even order on Kakao Talk. This service is so simple to use you will be able to navigate even through the hangover induced fog. Not convinced? <p>Forgive my  lack of posts lately dear readers, I have been ever so busy preparing for my upcoming trip to LA and Las Vegas!!! While I have been resting on my laurels, new restaurants have been springing up all over my neighborhood. I swear a new one opens every other day to meet the demands of the of the restaurant going tourists who flock to Kyungnidan to eat and be seen at the latest restaurant shown on TV. At the weekend you can barely walk around without having to push your way through the hoards of trendy girls in towering high heel or couples decked out in their latest matching ensembles. I haven&#8217;t got time for that, I&#8217;m a busy girl who needs to eat!</p>
<p>Now Don Charly is no newbie. He&#8217;s had a queue outside his door for a long  time now. This is a second location selling Mexican Tapas. A more upscale venture from the tiny store selling tacos and burritos. It&#8217;s certainly a great addition to the neighborhood.</p>
<p>The new restaurant is of a decent size, especially compared to the closet sized original. Slightly gaudy Tijuana style decorations. We only had to wait for about 5 minutes before getting a seat.</p>
<p>There are plenty of drinks on the new menu. We ordered up two margaritas to share between us. We got the cucumber and the pineapple, both 8,000. Of the two I certainly favoured the pineapple one. It was fruity and tasty, my only complaint is that I drank it too quickly. The cucumber one didn&#8217;t sit so well with me, it just seemed like an odd flavour combination and didn&#8217;t taste quite right. They have an original flavour too which is a nice bright blue which looked great.</p>

<p>On to the tapas we ordered the Camorones A La Crema Chipotle (10,000 for 3 pieces). They came quickly and were nice enough but nothing special. In no way shape or form could they beat the ones at <a title="Vatos Urban Tacos" href="/2014/04/17/vatos-urban-tacos/">Vatos</a>. The people at the next table said they had a delicious creamy sauce on them last time which seemed to be missing.</p>

<p>I ordered the Conchinita (8,000 for 2 pieces).  This was by far and away the best choice off the menu that we tried. The braised pork was so tender and flavoured exquisitely, on top of the salsa and crispy bottom. It was perfection. I could eat like eight of these by myself.</p>

<p>Lastly we ordered the Las Tamatilos (5,000 each).  I have grown to feel that I don&#8217;t really love tamales that much. But both my dining companions agreed that they were really good. They especially liked the mole sauce.</p>

<p>From what I have tried so far, I would love to come back and try a few more of the options on the menu and get some more of the amazing Conchinitas!  I have to confess I was pretty drunk when we came here, so my memory is a little fuzzy but I&#8217;m pretty sure I had a good time.</p>

<p>So as per usual I am way behind the foodie times. Every food reviewer and his dog has already written about the wonders of Vatos.  The restaurant already has queues going down the hill so I&#8217;m sure none of the regulars want me sharing it&#8217;s deliciousness with the few people that don&#8217;t know about it. However readers I want you to know about all the places that I love to eat and Vatos is definitely in my Top 5 which is why it was 100% necessary for me to write about it, even if it has taken me a year and a half!</p>

<p>This place is tres cool with a hip and happening vibe, in fact it&#8217;s probably so cool it&#8217;s out again. On any given evening it&#8217;s always filled to the brim with people eating, drinking and having a good time. As well as trying some of the best Mexican fusion food and drinks in Korea it&#8217;s <em>the</em> place to be seen.</p>

<p>Almost everything on the extensive menu is good here, but I will will run you through my favourites and some of the new items that are on their Spring/Summer menu. But before I can even get to to the food I have to talk about the cocktails. No one loves a cocktail more than Fat Girl and at Vatos they have a pretty damn good choice. Now for me the star attraction is their margaritas! With a huge variety of fruity flavours and a whole host of accompanying bottles you can  have upturned into one. Why have one drink when you can have two right? For the sweet toothed I have to recommend the Sexy Sanchez (17,400). A strawberry margarita with a strawberry Brunty&#8217;s cider, cider + taquilla = drunken fun times ahead! I am also a big fan of the new passion fruit margarita (12,500). For non frozen fans try the Texas Tea (14,000) and the Mexican Martini (15,000).</p>

<p>I have pretty much tried all the tacos at this point and hands down, the Lime Shrimp (10,000 for 3)  are my favourite. They are so good I would crawl over my grandmother to get them. In fact I usually order 3 then have another 3 because I love them that much. Breaded pieces of shrimpy goodness, salad, delicious limey sauce and their amazing homemade soft tacos. Just thinking about them right now is making me hanker after them. Just recently they added another flavour to their taco collection, Chimichurri Chicken Tacos (9,000 for 3). The chicken and chimichurri sauce has a really nice kick without being too spicy. They pack a punch of flavour while still remaining fresh and tasty.</p>

<p>Also on the new menu are the Honey Tequilla Chicken Wings (12,000). I do love a good wing and these are exceptional. The crunchy coating is spectacular. I asked for the recipe and they told me it was just seasoned flour, but mine never comes out like that!  The sauce has a dozen or so ingredients that I am sure I would never be able to recreate. I could have eaten at least two portions of these even on top of the tacos.</p>

<p>The Sid Burger &amp; fries(15,500) is the latest and most popular burger on the burger network. Aptly named after it&#8217;s genius creator Sid! Now I love a good burger, I have written about this fact dozens and dozens of times. I even belong to a Seoul Burger Lovers Group on Facebook, yes there is one you can join <a href="https://www.facebook.com/groups/134721516576440/">here</a>. Among the elite burgeratti of Seoul this is one of the most highly regarded and I was desperate to try it. A burger, cheese, and pulled pork. It&#8217;s like two things I love got married and had a burger baby. This is a serious mouthful of meaty goodness. Vatos makes some seriously good burgers, so be sure not to neglect them in favour of their more Mexican style dishes.</p>

<p>Lastly we has to try the Tamales (10,000 for 2). I fell in love with tamales when I was in Argentina and never thought in my wildest dreams they would turn up in Korea. When Vatos put them on the menu I was one of the first to try them. Two big tamales stuffed with corny goodness and two dipping sauces. One cool and one spicy, so everyone is happy.</p>

<p>One word of advice, this place gets packed during prime dining hours especially at weekends. Luckily you can make a reservation, do it or prepare to queue. The other option is eating at the bar or a little island table. As the cool and trendy folk that like to queue come here to be seen as well as enjoying amazing food, and are not generally interested in those tables so you can usually jump the line a little. <p>I was invited to try the Live Guacamole (19,000) as part of my exciting career as a food journalist for <a href="http://www.10mag.com/">10 Magazine</a>. Free guacamole, I hear you cry, Fat Girl you are living the dream! I sure am and it&#8217;s a dream filled with avocados.</p>
<p>Live Guacamole is a dish that is served, unsurprisingly  &#8220;live&#8221;. One of the lovely waiters or waitresses will come over to your table with their batch of ingredients and make the guacamole in front of you. Quite a novel idea, I do  enjoy a bit of theatre with my dinner. They also do a Live Queso too.</p>

<p>The guacamole is fresh, and it&#8217;s definitely a fine selling point. Personally I would have liked it with a bit more seasoning or kick, but a few drops of hot sauce later and it was pretty much perfect.</p>

<p>Whilst I was there I figured it would be churlish not to try a few other items. We ordered up the Chicken Empanadas (13,500). I am a huge fan of the empanada ever since my jaunt around South America a few years ago. In fact I practically lived off them for three months so like to consider myself a bit of an expert. The filling was more of a Tex-Mex fusion than a tradition one, but they were in no way less delicious. Cheesy with a slight spice. The skin was crispy and especially delicious. But lets face it, anything deep-fried tastes great.</p>

<p>I also had a hankering for fajitas. It&#8217;s a dish we often have at home but rarely have out. I was having trouble deciding upon which meat to have, so went for the Ultimate Fajita (33,500). Served 0n a sizzling fajita grill is none other than shrimp, chicken, steak, onions and peppers! They also give you tortillas, refried beans, rice, salsa, guacamole, and sour cream.Iit&#8217;s actually very good value and really tasty. This is a dish to share.</p>

<p>As you can see we devoured the lot, and a good time was had by all.</p>

<p>When I first heard that this restaurant was opening, I was more than skeptical to say the least. Yet another Mexican restaurant, in the Itaewon area when it&#8217;s already bulging at the seams with them. Don&#8217;t get me wrong, I love Mexican food, but I was not sure what this new chain had to offer for us food enthusiasts. However, go I did, and I was not in the least disappointed.</p>
<p>The restaurant is huge for Itaewon, it&#8217;s in the site where the old Macaroni Market used to be. Despite it&#8217;s vastness there was already quite the queue waiting to get inside when we arrived. We went to put our name down on the list and found it was a 20 minute wait.  Now Fat Girl is not fond of standing in line, but I politely refrained from screaming, &#8220;Don&#8217;t you know who I am?&#8221;  As I cast my eyes around the restaurant, I spotted that they  had a few seats at the bar and asked if we could have a drink while we waited. They of course agreed so we sat down at the bar whilst the delightfully named bar tender &#8220;Baggie&#8221; got us a drink.</p>
<p>The drink menu is pretty decent, lots of different margaritas, fresh or frozen, and a variety of beverages you can have upturned into one. I went for a frozen  raspberry margarita with a bottle of Bernini in it (sparking rose) for 15,000. It was very sweet but delicious to me. I also ordered up a cilantro mojito (8,900), this was also exceptionally good and a great take on the classic.The Fat Boyfriend had a couple of beers (5,500), which came in very well frozen mugs, which was most to his liking despite the cold weather.</p>

<p>While we were sipping our drinks we were presented with the free bottomless chips and salsa. The chips are fried in house  and the salsa is very tasty. If you&#8217;re not in the mood for a meal, you could easily just come here for a cocktail and eat the free chips and salsa to keep you going.</p>
<p>A cocktail later we were shown to our table. The menu is huge with plenty of options, tacos, fajitas, burritos, and a plethora of appetizers are on offer. I always enjoy eating as much as possible so we opted for the sampler (28,000). It was a giant platter, which 3 or 4 less greedy people could easily share. The Fat Boyfriend and myself decided to split it. On the platter were 4 quesadillas, 4 flautas, 4 loaded nachos, salsa, sour cream, guacamole, and a really yummy cheesy dip. It was a large plate of lovely Tex-Mex delights.</p>

<p>We also ordered a chicken Bordurrito (18,500). It was a hearty sized burrito cut into two with a nice flavour running throughout. It was stuffed with chicken, rice, caramelized onions, peppers, and sour cream. It also came with a side salad. But the  appetizer platter actually pretty much defeated us. Although I must confess that I had already been on the <a title="Itaewon Foodie Crawl" href="/2013/08/21/itaewon-foodie-crawl/">foodie crawl </a>earlier in the day. I don&#8217;t want to to think I&#8217;m losing my edge. So we both tried the burrito for research purposes and had the rest wrapped up to go, along with a few appetizers we couldn&#8217;t manage. They even wrapped up the tortilla chips we didn&#8217;t eat and the salsa, which I enjoyed as a delicious breakfast treat the next morning.</p>

<p>Overall I really enjoyed my dinner at On the Border, there was a great atmosphere in the restaurant, and this is somewhat what you are paying a premium for. It&#8217;s not the cheapest Mexican food on the block, or the most authentic. But it&#8217;s fresh, tasty and comes in large portions. They have great big drinks and good food to match, which I think is worth a treat.It&#8217;s always nice to have a taste of home and that&#8217;s exactly what On the Border is.</p>

I bought a kilo of mince beef at the butchers at the weekend and was wondering what to make. I thought I should try to make a few different things. I planned on making some spicy beef samosas, but when I took out my rather old samosa wrappers, they had seen far better days and I had to throw them away. For lack of a better idea I just made a giant batch of chili. We had some on top of homemade potato wedges and a little with rice. The rest went into the freezer. Then on Monday, inspiration struck, and I decided to try out Mexican lasagne. I took my chilli out of the freezer and warmed it back up, whipped up a quick cheese sauce, and bing bang boom, dinner was done in about 20 minutes. I will definitely be making this again very soon.</p>
<p><strong>Ingredients</strong></p>
<p><em><strong>Chili </strong></em></p>
<p>350g of mince beef</p>
<p>1/2 a can of kidney beans</p>
<p>1/2 a can of black beans</p>
<p>1/2 can of corn</p>
<p>1 green pepper</p>
<p>1 red pepper</p>
<p>10 mushrooms</p>
<p>1 onion</p>
<p>4 cloves of garlic</p>
<p>6 tomatoes or 1 can of chopped tomatoes</p>
<p>1 tablespoon of Worcestershire sauce</p>
<p>2-3 tablespoons of Mexican seasoning</p>
<p>1 teaspoon of chili powder</p>
<p>A small bunch of cilantro (고수)</p>
<p><em><strong>Cheese sauce</strong></em></p>
<p>25g of butter</p>
<p>25g of flour</p>
<p>400ml of milk (roughly)</p>
<p>Salt and pepper to taste</p>
<p>100g of cheddar cheese</p>
<p><em><strong>Lasagne</strong></em></p>
<p>4 large tortillas or 8 small</p>
<p>150g of grated cheese (i used a mix of mozzarella and cheddar)</p>
<p><strong>Directions</strong></p>
<p>Finely chop the onions and garlic and fry off in a little olive oil for a few minutes until softened. Then add the mince and fry until browned. Add the Worcestershire sauce and Mexican seasoning and stir. Chop the peppers and mushroom and add to the mince along with the tomatoes. Mix together, if it is a little dry add a cup of water or tomato juice. Cook for another 5- 10 minutes then add the beans and corn. Taste the chili then add in the cilantro and chili powder to taste.When the chili is done remove from the heat.</p>
<p>To make the cheese sauce melt the butter on a low heat in a saucepan, then add the flour. Mix together to make a paste, then add the milk. Whisk the sauce to dispel the lumps then keep stirring. After a few minutes the sauce will thicken, if it&#8217;s too thick add a little more milk. If it&#8217;s too thin add in a teaspoon of butter and a teaspoon of flour. As long as you add fat with your flour, the sauce will never be lumpy. Once the sauce has thickened add the cheese and stir until it has melted. Depending on what I am making I also like to crumble in a little chicken stock cube or mustard to give a little extra flavour.</p>
<p>To assemble the Mexican lasagne trim the sides off the tortillas to make them squarer, unless you are using a round dish of course. Place a tortilla in your dish then cover with a third of the chili, then place another tortilla and top with the second third of chili. Add  another tortilla then top with the final third of chili and finish with a tortilla. Use the trimmed pieces to fill in any gaps, then top with the cheese sauce and grated cheese. You can also sprinkle on a little extra cilantro on the top if you have some. Bake in the oven for about 10 minutes to let the cheese melt. When it&#8217;s ready remove from the oven and leave for about 10 minutes or as long as you can wait for it to set a little. If you want to have beautiful slices then it needs to cool. Never one to have any patience I was not particularly good at this so my pictures are less than perfect, but you get the idea. Voilà Mexican Lasagne!</p>

<p>Every time I seem to watch TV, the characters always seem to be eating Huevos Rancheros. By the time I got to the third time I couldn&#8217;t stop thinking about it, so I decided to whip myself up a batch. We like to vary our brunches, especially if we aren&#8217;t going out to a restaurant. It&#8217;s a nice change from the usual weekend brunch or even as a quick and easy dinner. Perfect for the summer time.</p>
<p><strong>Ingredients</strong></p>
<p>2 eggs</p>
<p>2 tortillas (I used the 6 inch ones)</p>
<p>1/2 a can of black beans</p>
<p>3 tablespoons of salsa</p>
<p>1 tablespoon of sour cream</p>
<p>1/2 an avocado</p>
<p>A few sprigs of cilantro</p>
<p>1 teaspoon of Mexican seasoning</p>
<p><strong>Directions</strong></p>
<p>The first step is to blend the black beans with 1 teaspoon of Mexican seasoning. You can just do this with the back of a fork if you don&#8217;t have a blender. Once the paste is formed warm it up in the microwave or a saucepan. Warm the tortillas, while you fry the eggs. chop the avocado. Put the tortilla on a plate, top with the black bean paste. Then top with the fried egg then arrange the salsa, sour cream and avocado as you like and sprinkle with cilantro. Voilà Huevos Rancheros.</p>
